1. Responsible for overseeing inventory, maintaining kitchen sanitation, and controlling food and labor costs. Prepares daily food purchase orders and monitors inventory levels to ensure sufficient supplies are available to meet projected needs based on menu forecasts. This includes minimizing spoilage and waste by ordering replacement stock and strategically avoiding overstock while keeping costs low. Inspects all incoming products and supplies to verify that quantities are accurate and that quality meets established standards and specifications.
2. Ensures all food is prepared in accordance with established Best-In-Class standards and procedures to meet cost and quality objectives while minimizing waste. Creates and promotes daily specials to enhance menu variety and customer engagement. Overseas and expedites food service during operating hours to ensure timely and efficient delivery.
3. Responsible for creating and maintaining a monthly ledger to track budgetary items, which is compared against the General Ledger (GL) statements provided by the Tribal Finance Department for use in the annual budgeting process. Completes all required daily financial tools and reports and communicates any variances from established standards to the Tribal Administrative Manager. Ensures that all expenses remain within the approved budget.
4. Monitors the cleanliness of all assigned work areas and promptly addresses any deficiencies. Maintains high standards of hygiene and sanitation across all service areas. Ensures that all staff comply with health department regulations and Hazard Analysis Critical Control Point (HACCP) requirements.
5. Ensures the safety and security of all Cafeteria staff by enforcing compliance with all relevant policies, procedures, and regulatory standards. Monitors incidents involving lost time due to injuries and implements targeted programs and preventive measures to reduce workplace accidents and minimize downtime.
6. Maintains Cafeteria equipment in accordance with established maintenance schedules to ensure optimal performance and longevity. Coordinates regular inspections, identifies potential issues, and manages timely repairs as needed. Evaluates equipment condition and functionality to recommend replacements as needed. Contacts vendors to verify warranty coverage for existing equipment and ensures all warranty documentation is accurate and readily accessible for reference.
7. Prepares comprehensive reports and presentations for the Tribal Administrative Manager, incorporating all necessary documents, charts, and spreadsheets derived from cafeteria records. Conducts monthly inventory and submits detailed reports to support operational oversight and financial accountability.
8. Performs other duties as assigned to support the efficient operation of the department.
Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring and training employees; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Makes hiring decisions and designs individual development plans with succession planning in mind for all key roles.
Education, Experience And QualificationsBachelor’s degree in Culinary, Food Service, Hospitality, Business Management or related field required.
Minimum one (1) year experience working in high-volume line cooking or production cooking in a full-service dining establishment or food service establishment required.
Minimum two (2) years supervisory experience in a full-service restaurant preferred.
Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements indicated above.
Knowledge, Skills And Abilities (Ksa)Catering and Special Function Set-up experience preferred.
Must be proficient in Microsoft Office (Word, Excel, Outlook, PowerPoint).
Must be able to read, write and communicate in the English language.
Must be able to perform simple mathematical operations (addition, subtraction, multiplication, and division).
Must be able to provide friendly and efficient service to guests and team members, addressing their needs and resolving issues.
Must be able to have clear and effective communication with guests and team members.
Must be able to work under pressure by staying calm and efficient during busy period(s).
Demonstrates advance knowledge of food preparation and presentation.
Possess advanced skill level in hands–on training of team members.
Licenses, Certifications And RegistrationsAt the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
Must obtain and maintain a Food Handlers Card.
Must obtain and maintain ServSafe certification.
Driving Responsibilities: Role requires regular commuting between locations. A valid driver's license and vehicle insurance with minimum liability limits is required. Role will not operate or drive Tribe-owned vehicles or patron vehicles.
