Summary
Summary: Receives, verifies, unpacks, and stores items delivered to the kitchen; issues items to kitchen personnel, maintains inventories; assembles, measures, weighs and issues ingredients to the cold and hot production areas according to recipes. Responsibilities: Helps management track food and paper supplies, small wares. Conducts accurate food and paper and end-of-week inventory. Receives food deliveries, noting correct counts and weights to insure accuracy; checks products for quality, quantity, freshness and damage; insures credit is given for damaged goods; signs invoices to verify delivery. May assist in taking inventory and placing orders. Reports shortages or other problems to Executive Chef, Sous Chef or other members of the management team. Notifies Executive Chef and or Sous Chef of any spoilage, breakage, shortage or any equipment malfunctions.Processes incoming product by washing, cleaning and packaging items and stores product in walk-in refrigerator; may process, measure and portion. Labels raw product with name and date; labels prepared ingredients with name, served date and quantity.
Participates in daily review of production needs with ingredient control cook; pulls required ingredients from storage areas. Maintains all food storage areas, facilities and equipment in a clean, orderly and safe manner.
