About the location:

Senior Sous Chef – Italian

Job Summary
The Senior Sous Chef is the second-in-command of the resort’s Italian Trattoria, a vibrant restaurant celebrating authentic regional Italian cuisine in a warm, convivial setting. This leadership role requires proven expertise in traditional and contemporary Italian cooking, strong organizational and team management skills, and a passion for delivering memorable dining experiences. Working in close partnership with the Chef de Cuisine, the Senior Sous Chef oversees daily kitchen operations, menu execution, team training, and quality standards, ensuring smooth service and culinary excellence at all times.

Principal Responsibilities & Essential Functions

Operational Leadership – 30%
Oversees daily kitchen operations in the absence of the Chef de Cuisine, coordinating production, service timing, and station supervision.

Culinary Excellence & Execution – 20%
Prepares and directs the preparation of à la carte dishes, specials, and tasting menus, ensuring authentic flavors and consistent presentation.

Team Development & Training – 15%
Mentors and develops the kitchen brigade, fostering a culture of learning, collaboration, and accountability.

Menu Development & Innovation – 10%
Collaborates with the Chef de Cuisine to design and refine seasonal menus, regional specials, and signature dishes.

Quality Control & Standards – 10%
Conducts daily checks on product freshness, portioning, plating standards, and adherence to recipes.

Inventory & Cost Management – 10%
Monitors purchasing, inventory rotation, yield, and waste to achieve food cost targets.

Hygiene & Safety Compliance – 5%
Enforces strict compliance with HACCP, sanitation practices, and safe operation of all kitchen equipment.

Supportive Functions

Represents the Trattoria at resort events, tastings, and culinary showcases.Assists with scheduling, forecasting, and administrative tasks for the outlet.Supports cross-training and succession planning within the kitchen team.Promotes sustainable sourcing and waste reduction initiatives.

Physical Requirements

Ability to stand for extended periods in a fast-paced kitchen environment.Capacity to lift up to 25 kg and perform repetitive kitchen movements (cutting, kneading, plating).

Other Duties

Participates in resort culinary programs, special events, and themed evenings.Performs other duties as assigned by the Chef de Cuisine or Executive Chef.

Safety Requirements

Leads by example in enforcing food safety, sanitation, and allergen control protocols.Maintains a clean, organized, and hazard-free work environment.

Required Knowledge, Skills, and Abilities

Deep knowledge of regional Italian cuisine, fresh pasta, pizza, charcuterie, and traditional recipes.Strong organizational and leadership skills in high-volume à la carte operations.Ability to train, motivate, and manage a diverse kitchen team.Excellent knowledge of food safety, hygiene regulations, and HACCP standards.Solid business acumen in food cost management, inventory, and vendor relations.Proficiency with kitchen management systems and basic Microsoft Office applications.

Qualification Standards

Education

Culinary diploma or accredited professional training (required).Advanced training in Italian cuisine or related certifications preferred.

Experience

Minimum 8 years’ culinary experience, including at least 3 years as Sous Chef or Senior Sous Chef in an Italian restaurant.Previous experience in luxury hotels, resorts, or reputable trattorias strongly preferred.

Licenses or Certificates

Food Safety & Handling Certification (required).HACCP Certification (preferred).First Aid and Fire Safety Certification (preferred).

Grooming & Uniform
All employees are expected to maintain impeccable personal hygiene and professional appearance. Uniform and grooming standards will be shared during onboarding.

Working Hours & Days Off
This role requires a minimum of 45 working hours per week, with two days off. Flexibility is essential to cover key service periods, holidays, and special events.
