**Position Summary**
The Senior Manager of Food & Beverage at LEGOLAND is a pivotal management role responsible for the strategic planning, operational excellence, and financial performance of all food and beverage operations across the resort. This includes multiple dining outlets (Hotel’s Restaurant and Lounge, Food outlets in Park, Staff Canteen), food trucks, and special events. The Senior Manager will lead a large and diverse team, ensuring exceptional guest experiences, maintaining the highest standards of food safety and hygiene, and driving profitability in alignment with LEGOLAND's unique brand and family-friendly atmosphere. Works closely with Merlin Group Commercial functions to deliver Merlin standards through food and beverage offering. Also works closely with LEGO® to ensure compliance with product guidelines and our licensing agreement.

**자격 및 경험**
**Key Objectives:**
1. Researches, develops and implements successful commercial F&B actions for the park that will exceed guest expectations and that are compliant and consistent with both our group standards and LEGO requirements.
2. Ensure commercial actions operate to specified KPI targets including per cap, cost of goods and revenue targets.
3. Responsible for people management of food and beverage including organizational set up, recruitment, hiring, engagement, performance management and labor planning within budgetary guidelines producing high quality results.
4. Overseas warehousing operations for food products include strong inventory control and safety procedures.
5. Contribute to management team with an emphasis on guest experience and maximization of in-park commercial expenses.
Job Responsibility
**1. Operations**
- Ensure consistent delivery of high-quality food and beverage products that meet LEGOLAND's standards and appeal to a diverse guest demographic, particularly families with children.
- Implement and enforce rigorous food safety, sanitation, and hygiene standards (e.g., HACCP, local health regulations) across all F&B outlets.
- Oversee the efficient and effective operation of all F&B units, including staffing levels, service standards, and operational procedures.
- Monitor guest satisfaction closely through feedback mechanisms, actively address and resolve guest complaints, and continuously strive to exceed guest expectations.
- Ensure all F&B areas are well-maintained, clean, and visually appealing, consistent with the LEGOLAND brand.
- Drive innovation in service delivery and product presentation to create memorable dining experiences for guests.
- Manage catering and special event operations, ensuring successful execution and high guest satisfaction.
**_2._** **Financial**
- Assembles division budget including P&L with emphasis on labor, supplies and inventory control.
- Creates a robust commercial plan that maximizes in park spend and controls costs.
- Delivers quality guest service to KPI targets within budget frames and meeting per cap and revenue targets.
- Establishes sources for buying products through suppliers and manufacturers approved by Merlin Group.
- Determines detailed procedures for warehousing, stocking, and managing product inventory.
- Creates and implements procedures to control inventory, minimize waste and breakage.
- In compliance with the Merlin Operations Manual, ensures accurate cash handling and control procedures are followed. Actively participates in profit protection activities and controls all forms of loss.
**3. Development:**
- Develops, maintains and enhances the Hotel and Park’s F&B offering. Utilizes experience gained from the F&B programs developed for the other LEGOLAND parks as well as collaboration with Group Commercial F&B team.
- In conjunction with Merlin approved partners, establishes vendors for concession operations. Leads F&B IP product development and working with local external suppliers to commit product quality and LEGO specification. Develop plans for successful introduction of new F&B IP products and product lines.
- Participates in the layout and configuration of furnishings, equipment and displays for commercial outlets. Creates commercial strategy that maintains the highest standards, operational excellence and F&B product/menu mix based on clear each outlet’s food concept and narrative.
- Researches and develops plans for the food and beverage offerings that fit within Merlin standards while also considering local adaptation. Emphasis on creating a quality product for our guests while maximizing operational efficiencies and controlling costs.
**4. People**
- Promotes and demonstrates the Merlin Way and embodies LEGOLAND Korea Resort’s culture and core values through words and actions.
- Determines the organizational structure, operational planning, budgeting and staffing requirements for the commercial area. Maintains a balance of guest experience, commercial success and product presentation focus.
- Responsible for oversight of the recruiting, staffing, training, development, performance management, engagement, recognition, team building and other people and culture initiatives. Responsible for managing the training requirements to ensure a smooth opening of the park.
- Exhibits the ability to work effectively as a team member to contribute to the strategic and cultural direction of the organization.
- Exhibits the ability to work independently and execute commercial operational plan within job scope. Demonstrates organizational and business savvy, and the interpersonal skills, to work effectively in a dynamic organization with international and cultural differences.
- Working with their management team, manages commercial area staff turnover trends to control unwanted staff turnover.
- Responsible for annual engagement survey participation and action planning for the division. Ensures actions are taken against the results through their management teams.
- Utilizes and promotes the importance of recognition programs that are in place such as the Star Program to reward good performance and build an environment of celebrating success and giving feedback.
- Develops and contributes to a culture of positive relations for the Model Citizen staff members with approachability, open door policy and team building.
- All other duties as needed or assigned.
- Develop and maintain strong relationships with vendors, suppliers, and external partners to ensure quality products, competitive pricing, and reliable service.
**5. Health & Safety**
- HODs are responsible for all aspects of Health, Safety & Security within their department, in line with the Group Policy (HS001). They must ensure that risk assessments have been carried out, that safe working procedures are in place for all work activities and that all employees under their management are aware of the Group Health, Safety and Security Policy and their obligations under it.
- They must ensure that safe work practices are monitored and that risk assessments and procedures are reviewed regularly. Where incidents do occur, they must ensure that they are investigated appropriately and that where necessary, corrective action is taken to ensure that such incidents are not repeated.
Key Skills
- Requires at least 10 years of progressive management experience in a theme park/attractions industry, or similar industry with at least five years of management level experience.
- Ability to set vision and strategy, manage against objectives and schedules, provide commercial expertise and direction for the business.
- Comprehensive F&B Operations Expertise: In-depth knowledge of all facets of food and beverage operations, including restaurant, quick-service, catering, and especially F&B retail management. Proven ability to oversee and optimize diverse revenue streams within a high-volume environment.
- Strong Financial Acumen: Demonstrated proficiency in budgeting, cost control, P&L management, financial analysis, and strategic forecasting to drive profitability and efficiency.
- Culinary & Kitchen Management: Solid understanding of culinary practices and kitchen operations, including hands-on experience and the ability to oversee menu development, food preparation standards, and back-of-house efficiency.
- Requires a track record of success in the development, implementation, and the operation of high-quality commercial endeavors.
- Strong team building, group facilitation, and leadership skills required.
**Education:** Bachelor’s degree in hospitality management, Culinary Arts, Business Administration, or a related field. A master’s degree is preferred. Minimum 3 years of kitchen experience a plus.
