Summary About the position: This position is Non-appropriated Fund (NAF) and is located at Route-16 and Mediterranean Bistro. This is a Regular Full Time position, guaranteed 40 hours a week Responsibilities Serves as the manager of a standalone restaurant, responsible for ensuring positive economic and efficient operations. Plans, schedules, and coordinates work operations, schedules, equipment and materials while adhering to work priorities, project, schedules, resources, and work plans established by the supervisor. Plans and prepares menus, cost estimates, determines quantities, components and courses of meals; calculates prices. Prepares cost estimates, establishes stock levels and requisitions stock for use. Ensures adequate stock levels arc maintained. Prepares contracts for facility functions. Maintains records, verifies cash register readings against restaurant requisitions. Prepares, verifies and approves associated reports and other miscellaneous financial reporting data for accuracy and control (change funds, sales and deposits reports). Establishes general requirements for supplies, stock menus, etc. Assures proper receipt and storage of stock and establishes control to prevent loss. Monitors stock levels to ensure timely replenishment of recurring items. Prepares, monitors, and reviews budgets (monthly and annual) and other financial transactions to ensure efficient and economic operations. Responsible for workforce management, recruitment and staff training. Assigns, directs, and reviews the work of subordinates. Assures patron satisfaction by resolving complaints and other customer problems. Inspects and secures safe and facility at the end of the shift. Conducts periodic inventories to maintain an adequate stock. Responsible for monitoring, maintaining, and implementing all public health regulations pertaining to proper handling and storage of all fresh, frozen, and dry storage food products for daily production, including self- inspections of the facility. Responsible for ensuring products and supplies are properly stored and the proper preventative maintenance and monitoring of all equipment related to food storage e.g. refrigerator, freezer, ice machines/dispensers, and dry storage rooms arc adhered to in accordance with established guidelines. Ensures maintenance of equipment and the facility. Keeps team members up to date with current promotions, trends, safety issues, and other relevant information. Purchasing related equipment and supplies. Responsible for issue, receipt, and control of cash boxes. Provides or ensures related training is obtained and is current. Performs driving duties related to delivery of food as needed. Performs other related duties as assigned. Qualifying Experience: Must be able to demonstrate progressively responsible experience which has provided a general knowledge of management principles and practices applicable to the operation of a commercial, industrial, institutional, or government food facility. Experience should sufficiently demonstrate the ability to perform successfully at the grade level of this position. Must possess specialized experience gained in the operation or management of a government or civilian club, restaurant, or institutional feeding facility. Experience must include knowledge which has demonstrated supervisory methods and techniques and ability to delegate work. Experience should also include technical expertise in at least one function of club operations or programs and the ability to analyze problems and make decisions considering a wide- range of factors and requirements. Must have knowledge of applicable rules and regulations in areas such as budgeting, personnel, and the ability to develop operating procedures implementing these requirements. Must possess basic cooking/culinary skills, including measuring ingredients, using a knife, boiling and simmering, sauteing, roasting and baking, searing, seasoning and tasting, plating and presentation. Must also possess experience which provides knowledge of cash handling procedures and sales operations such as: receipt, disbursement. examination, deposit, and use of cash accountability control methods. Must be able to communicate orally and in writing and possess skill in dealing with the public. Must be able to work an uncommon tour of duty Including nights, weekends, and holidays. Must possess and maintain a valid government Issued driver's license. This is a drug testing designated position; the Incumbent will be subject to random testing for drug use. This is a position of trust. Must be able to satisfactorily complete a tier l background investigation in addition to a local installation records check. Substitution for general experience: A 4-year degree from an accredited college with a major in, or a combination of the following areas: hospitality, culinary or club management, or business management. Ability to Lead or Supervise Customer Service Inventory Control Education Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does allow for education substitution in order to qualify. Additional Information Male applicants born after December 31, 1959, must complete a Pre-Employment Certification Statement for Selective Service Registration. U.S. Citizens and Non-U.S. Nationals who have resided in the U.S. or U.S. Territory for three (3) or more consecutive years immediately preceding the start of Federal affiliation. All Federal NAF employees are required by PL 104-134 to have salary payments made by electronic funds transfer/direct deposit. Probationary period may be required.
