Restaurant Manager – Sommelier

To manage the assigned outlet as a successful independent profit centre in line with hotel standards, ensuring maximum guest satisfaction and financial success. Additionally, to oversee the wine and beverage programme of the outlet, using sommelier expertise to curate, source, and manage an exceptional and profitable beverage offering that enhances the restaurant’s identity.

Job Descriptions:

Monitor outlet operations, particularly during peak periods, adjusting as necessary.

Maintain service standards.

Conduct menu engineering and sales analysis to improve profitability.

Identify marketing and PR opportunities, coordinating wine and beverage promotions with the yearly marketing plan.

Establish and monitor par stocks; oversee purchasing and inventory control.

Analyse sales performance and profitability of beverage lists, improving customer satisfaction and profitability.

Develop restaurant-specific beverage lists in partnership with DOFB/ADOFB.

Research and source new wineries/wines, including exclusive products.

Ensure compliance with cost-to-selling price ratios and adjust pricing to vintage or market changes.

Oversee quality management of all beverages, including cocktails.

Update beverage menus daily to reflect accurate pricing, vintages, and availability.

Work with DOFB / ADOFB to plan promotions, wine dinners, and related events.

Ensure associates deliver the brand promise and exceptional service to all guests.

Spend service periods on the floor, assisting patrons with beverage recommendations.

Handle guest complaints courteously, ensuring satisfactory resolution.

Collaborate with Events and Banqueting teams to maximize beverage sales opportunities.
