W Brisbane located at 81 North Quay, Brisbane City is hiring a Pastry Sous Chef. Reporting to the Executive Chef, you will take the lead in managing our pastry kitchen, ensuring excellence in the preparation, presentation and consistency of all pastry offerings.
This is an exciting opportunity for a talented pastry professional who brings artistic flair, technical precision, and strong leadership skills to the table. You’ll be instrumental in delivering memorable guest experiences while fostering a collaborative and high-performing team culture.
Key Responsibilities:
+ Oversee the preparation, production, and presentation of all pastry and dessert items, ensuring they meet prescribed recipes and quality standards
+ Manage the pastry section during shifts and ensure all work is carried out in accordance with food safety and hygiene standards
+ Maintains proper food handling, preparation, and storage practices
+ Ensures compliance with all applicable laws and regulations (e.g. HACCP)
+ Manage all pastry-related stock and ordering, including monitoring inventory levels and placing orders
+ Lead and mentor the pastry team, managing shift duties and ensuring smooth kitchen operations
+ Encourage and build mutual trust, respect, and cooperation among team members
+ Ensuring and maintaining the productivity level of Talent
+ Contribute to achieving financial goals by managing pastry inventory, minimizing waste, and ensuring cost control
