Check out this video for more information on our great company! Location Description The David Rubenstein Forum is a University-wide facility for scholarly and academic discourse on campus. The venue supports and promotes inquiry, the open exchange of ideas, and the power of academic, interdisciplinary convening. The Forum is located at the intersection of East 60th Street and Woodlawn Avenue. It serves as a place where scholars gather and exchange ideas through activities that range from talks and workshops to multi-day conferences that span academic disciplines. The facility provides spaces and amenities that are not currently available on campus, including highly collaborative, well-appointed meeting and event rooms commensurate with the types of conferences, special events, workshops, and meetings that University faculty and academic departments host. Qualifications BASIC FUNCTIONS: Assume leadership role in production, execution and overseeing Culinary Department; Banquets and or BARDAVID. Maintain a commitment for guest service and employee development. Maintain the highest quality while having an understanding for food cost and daily sanitation best practices. QUALIFICATIONS: EDUCATION, KNOWLEDGE, TRAINING, & WORK EXPERIENCE Three years culinary supervision experience in similar operation. Culinary school or related experience. Strong knowledge of kitchen operations, food safety and sanitation regulations. Experience with inventory management and cost control Knowledge of menu preparation and production organization. High school diploma or equivalent. Creative, innovative and assertive personality. ESSENTIAL FUNCTIONS: Primary culinary leader in respective outlet in absence of Executive Chef or Pastry Chef. Establish and maintain a guest first service mentality while adhering to property standards. Write description of the evening in the logbook. Prepare, together with assigned cooks, food items designated by the Executive Chef according to Forum standard recipes and policies. Ensure that the stations are clean and that all food items are properly covered and stored at the end of each shift. Supervise Kitchen Operations: Oversee food preparation, cooking, and presentation to maintain consistency and quality. Oversee cooks to ensure production and timeliness of food preparation. Inventory & Cost Control: Reduce waste, and maintain proper stock levels through nightly order lists. Compliance & Safety: Ensure the kitchen meets all health, safety, and sanitation guidelines according to Chicago and Illinois regulations. Menu Consistency: Collaborate with chefs to maintain highest standards of current menu and enhance menu offerings. Equipment & Maintenance: Ensure kitchen equipment is well-maintained, and notify of needed repairs. Maintain a good working relationship with all Departments. Checks/Maintains daily production sheets and check with Executive Chef as to daily work needs. MARGINAL FUNCTIONS: Respond to any reasonable task assigned by Executive Chef or Pastry Chef. Assist in other areas of the kitchen as needed. Maintain ongoing programs for sanitation and safety. Knowledge of kitchens and storage areas Knowledge of use, cleaning, safe handling and breakdown of all equipment. Attend and be an active part of the Management team to include weekly meetings, collaboration efforts, and strategy sessions. Ability to work any assigned shift/work schedule. Any other task, written or verbal, assigned by Culinary Management Compensation Range The compensation for this position is $25.00/Hr. - $25.00/Hr. based on qualifications and experience.
