About the location:

Junior Sous Chef – In-Villa Dining

Job Summary
The Junior Sous Chef oversees the day-to-day culinary operations of the In-Villa Dining kitchen, delivering refined and personalized dining experiences to guests in the privacy of their villas and residences. This supervisory role requires solid culinary skills across international and regional cuisines, a strong sense of organization, and the ability to lead a small, dedicated team in a fast-paced, service-driven environment. The Junior Sous Chef ensures timely preparation, consistent quality, and immaculate presentation of dishes while upholding the highest standards of hygiene and safety.

Principal Responsibilities & Essential Functions

Operational Supervision – 30%
Oversees daily production and service in the In-Villa Dining kitchen, coordinating mise-en-place, station readiness, and smooth order execution.

Culinary Preparation – 20%
Prepares à la carte items, overnight menus, and special requests to the highest quality and presentation standards.

Team Training & Development – 15%
Supervises and trains Commis Chefs and Demi Chefs, ensuring adherence to recipes, portion control, and service protocols.

Quality & Consistency – 10%
Monitors food freshness, portioning, plating, and compliance with established standards.

Guest Special Requests & Personalization – 10%
Collaborates with the service team to accommodate dietary needs, special celebrations, and unique culinary experiences.

Inventory & Cost Control – 5%
Assists with stock rotation, accurate requisitioning, and maintaining food cost targets.

Hygiene & Safety Compliance – 10%
Ensures all HACCP, sanitation, and food safety standards are rigorously followed in the In-Villa Dining kitchen.

Supportive Functions

Assists in menu tastings, seasonal updates, and development of in-villa dining experiences.Supports cross-training and operational coverage in other kitchens as needed.Participates in resort events, private functions, and VIP services.Upholds sustainability practices, responsible sourcing, and waste reduction initiatives.

Physical Requirements

Ability to stand for extended periods in a high-demand environment.Capable of lifting up to 20 kg and performing repetitive tasks (plating, portioning, packing).

Other Duties

Participates in resort activations and culinary showcases as required.Performs additional duties as assigned by the Sous Chef, Chef de Cuisine, or Executive Chef.

Safety Requirements

Leads by example in safe food handling, allergen controls, and equipment usage.Maintains a clean, organized, and hazard-free workspace.

Required Knowledge, Skills, and Abilities

Proficiency in international and regional cuisines, breakfast, all-day dining, and overnight offerings.Excellent organizational skills to manage high volumes and simultaneous orders.Strong supervisory and training abilities to develop junior team members.Solid understanding of HACCP and food safety regulations.Basic computer skills for order management, inventory, and recipe documentation.

Qualification Standards

Education

Culinary diploma or accredited professional training (required).

Experience

Minimum 4–6 years’ culinary experience, including at least 1–2 years in a supervisory role in in-room dining, banqueting, or à la carte restaurants within luxury hotels or resorts.

Licenses or Certificates

Food Safety & Handling Certification (required).HACCP Certification (preferred).First Aid and Fire Safety Certification (preferred).

Grooming & Uniform
All employees are expected to maintain impeccable personal hygiene and a polished professional appearance. Uniform and grooming standards will be communicated during onboarding.

Working Hours & Days Off
This position requires a minimum of 45 working hours per week, with two days off. Flexibility is essential to support breakfast, lunch, overnight, and late-night service demands.
