This individual will play a critical role in designing, implementing, and monitoring hygiene and sanitation processes, protocols, and SOPs—particularly within culinary and food beverage outlets. The successful candidate must have a deep and practical understanding of hygiene principles, regulatory requirements, HACCP standards, and international food safety protocols.
Key ResponsibilitiesDesign and implement comprehensive hygiene and sanitation protocols across all FB outlets, kitchens, and relevant operational areas.
Conduct regular internal audits, inspections, and risk assessments, ensuring full compliance with statutory and corporate hygiene requirements.
Lead and conduct food safety and hygiene training for all relevant colleagues.
Collaborate with the Executive Chef, Stewarding, Housekeeping, and Engineering teams to maintain and improve hygiene standards.
Serve as the primary point of contact for health inspections and liaise with local authorities as necessary.
Develop a hotel-wide Hygiene Monitoring Program, complete with data tracking, trend analysis, and continuous improvement plans.

Experience with Hyatt Hotels Corporation or other global luxury hospitality brands is a strong advantage.
Certified in Food Safety Management Systems (FSMS), HACCP, or equivalent hygiene qualifications.
Demonstrated ability to develop hygiene SOPs and implement them from the ground up, particularly in pre-opening or process redesign scenarios.
Deep knowledge of local public health regulations and international food safety standards.
Strong leadership and training skills with the ability to instill a culture of hygiene excellence among kitchen and service teams.
Excellent communication and documentation skills, with proficiency in creating reports, audits, and process guidelines.
Proactive, detail-oriented, and comfortable working in high-pressure, fast-paced environments.
