F&B/Culinary Manager

Job Description Summary

JOB OVERVIEW:
Manage the food and beverage and culinary operations of the hotel to ensure the achievement of established food and beverage quality and guest service quality standards and departmental revenue and profit goals. The F&B/Culinary Manager will ensure a profitable operation by producing high-quality products and maintaining high service levels. Effectively monitor the daily operations of the Food and Beverage Department, which include the Kitchen and F/B Outlets. They will also provide support and guidance to fellow Banquet personnel to ensure a successful and effective operation ending in a positive guest experience. Adhere to federal, state and local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.

Job Description

DUTIES AND RESPONSIBILITIES:

Train and schedule employees to ensure proper coverage. Monitor performance and recommend corrective action.  Alert management of potentially serious issues.Respond in a prompt and professional manner to guest requests and complaints.  Make appropriate service recovery gestures according to established guidelines in order to ensure total guest satisfaction.   Oversee cash handling and check/credit policies and procedures.  Inspect ArtBar daily to ensure high quality food and food presentation and cleanliness.Conduct pre-shift meetings to inform staff of daily events. Review daily specials.Ensure set-up and closing side-work; stocks service station, makes coffee, etc.  Preset trays as necessary; prepares flatware “roll-ups”.Promote teamwork and quality service through daily communication and coordination with other departments. May routinely greet guests and serve food and beverage.Perform other duties as assignedMonitor quality of service in banquet operationsEnsure compliance with all local liquor laws, and health and sanitation regulationsEnsure compliance with SOP’s in all outletsUnderstand and be able to prepare payroll and tip distributionCoordinate all banquet related Food and Beverage requirements with the appropriate departmentKeep kitchen informed of accurate counts for platingReview menu/serviceMaintain up to date details on banquet functions and communicate to managersMake personal contact with guests and assist them with any requestsSupervise proper tabulation of all banquet checks and ensure that all checks are presented to guests for signatureEnsure safety, sanitation, and cleanliness of service areasOversee banquet set-up assignments

Qualifications and Requirements:

2 years related experience preferably in a facility of similar size and complexity, including supervisory experience, or an equivalent combination of education and experience.Bachelor's degree in Hotel Management, culinary arts, or related field preferred.Advanced training in Food and Beverage operations and hotel experience is a plusExcellent communication (verbal/written) skills requiredProblem solving, reasoning, motivating, organizational and training abilities are essentialAlcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.May be required to work nights, weekends, and/or holidays
