About the role:
A Chief Steward oversees the stewarding department in a hospitality or food service operation, ensuring all kitchens and back-of-house areas are clean, organized, and compliant with hygiene standards. They are responsible for: Managing stewarding staff (hiring, training, scheduling, and supervising). Ensuring proper use and inventory of cleaning equipment and chemicals. Implementing deep cleaning schedules and maintaining HACCP and food safety compliance. Coordinating with culinary and engineering teams for equipment maintenance. Promoting safety, efficiency, and teamwork in the back-of-house. The role is crucial for maintaining operational hygiene and supporting seamless kitchen and service operations.
What you will do:
Leadership & Team Management
Select, train, evaluate, lead, and coach all stewarding team members.Foster a culture of accountability, teamwork, respect, and safety.Ensure team members follow established operational standards and core values.Sanitation & Compliance
Maintain strict adherence to HACCP and food safety standards.Oversee the sanitation and organization of all kitchens, pantries, waste areas, compactor rooms, staff dining, and stewarding equipment.Implement and monitor detailed annual and monthly deep-cleaning schedules.Inventory & Equipment Oversight
Manage inventory of cleaning supplies, stewarding tools, and service equipment (china, silver, glassware, etc.).Plan and conduct annual audits, coordinate repairs and replacements of machinery and utensils.Ensure safe and correct use of chemical cleaning products, providing documentation and training.Labor & Cost Control
Develop and maintain efficient labor scheduling to optimize productivity while managing costs.Control operating expenses through effective purchasing, cost control, and budgeting practices.Interdepartmental Coordination
Work closely with the Executive Chef, Engineering, F&B outlets, Banquet teams, and Hygiene Officer to ensure smooth operations and adequate support for all events and services.Attend regular operational meetings to ensure strong communication and cooperation between departments.Operational Support
Supervise stewarding support for banquet setups and breakdowns.Ensure the stewarding department contributes positively to the guest experience by maintaining the highest standards of cleanliness and efficiency in all support areas.Safety & Culture
Promote a safe, inclusive, and respectful work environment.Ensure compliance with all local regulations and internal policies, including safety and conduct guidelines.What you bring:
•One + years experience working within a luxury hotel or similar environment is considered an asset
•Excellent interpersonal skills and communication skills
•Cross cultural sensitivity, and customer service orientation
•Guest centricity and understanding the importance of guest’s preferences.
