An Executive Sous Chef will manage and lead the team to ensure smooth culinary operation and maximize the level of standard in the hotel’s kitchen.

What will I be doing? 

\n

As the Executive Sous Chef, you will be responsible for performing the following tasks to the highest standards: 

\n\nAs the Executive Sous Chef, you will be responsible for performing the following tasks to the highest standards: \nPlan, prepare, and implement high-quality and well-crafted food and beverage products, especially breakfast\nEnsure delivery of food quality for the team member dining \nWork seamlessly with recipes, standards, and plating guides. \nMaintain all HACCP aspects within the hotel operation.  \nOversee the cleanliness, hygiene, and maintenance of the kitchen and undertake steps necessary to maintain the highest possible standards in this area. \nEnsure team members are well-trained in their function and nurture their development for career growth\nProvide clear direction and guidance to the team members.\nParticipate actively in quality initiatives such as daily chef briefings and monthly team meetings in order to constantly improve the culinary operation, meet targets, and keep communication flowing. . \nAssist in inventory taking. \nKnowledgeable of hotel’s occupancy, forecasts, and achievements. \nPrepare menus as requested, in a timely fashion. \nWork on new dishes for food tastings.\nWork closely with the Stewarding department to ensure high cleanliness levels and low loss and breakage levels. \nPurchase and control production. \nCoordinate, organize, and participate in all production pertaining to the kitchen.  \nCheck and follow-up on the assembling of ingredients and equipment for the ala carte menu, daily menus and seasonal specials, maintaining the standards of pre-set recipes, portion control, and costing at all times. \nExercise maximum control on wastage to achieve optimum profitability. \nCheck all equipment belonging to the department and make sure that all is in good working order..  \nEnsure that recipes and costings are established and updated. \nMonitor food quality and quantity to ensure the most economical usage of ingredients. \nAdvise new menus and seasonal food concept changes with the help of the Hotel Manager. \nCheck that the quality of food prepared by team members meets the required standard and make necessary adjustments. \nMonitor overall food operation and ensure that food items are being prepared in a timely and correct manner. \nControl, monitor, and be responsible for food costs to yield the maximum amount of outlet profit and maximum guest satisfaction. \nCarry out any other reasonable duties and responsibilities as assigned. \n

What are we looking for?

An Executive Sous Chef serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow: 

\n\nHigh School graduate. \n5 as Head of Kitchen in a focused service hotel with high standards. \nGood command of English and local language, both verbal and written, to meet business needs  \nAbility to lead and inspire the team with effective leadership skills, including performance management\nExperienced in providing effective training\nPossess a valid health certificate.  \nWork experience in a similar capacity with international chain hotels. \nTechnical education in hospitality or culinary school preferred. \n\n
