THE JOB:

The Executive Pastry Chef is responsible for leading and overseeing all pastry operations across multiple outlets, including banquets, retail shops, restaurants, and buffet venues. This role demands advanced expertise in both classical and modern pastry techniques, team leadership, and production management.

THE DAY-TO-DAY:

Creating and executing innovative dessert menus tailored to a variety of outlets and guest segments.

Leading large-scale production for high-volume banquet functions while maintaining quality and presentation standards.

Collaborating with restaurant chefs to design seasonal plated desserts that align with outlet identities.

Managing daily operations of retail pastry and bakery offerings with attention to consistency and guest appeal.

Ensuring buffet pastry and dessert selections are attractive, well-stocked, and frequently rotated.

Leading, mentoring, and scheduling a diverse pastry team including bakers, decorators, and production staff.

Maintaining food and labor cost controls and operating within departmental budgets.

Upholding sanitation, safety, and allergen protocols across all pastry production areas.

THE IDEAL CANDIDATE:

The ideal candidate is a highly organized and creatively driven pastry professional who thrives in a fast-paced, high-volume luxury environment.

They possess a deep understanding of pastry techniques and menu presentation, and demonstrate a refined palate and commitment to excellence.

This chef can successfully manage multiple outlets, balance shifting priorities, and consistently deliver high-quality results.

A bachelor’s degree is preferred, with a minimum of two years of relevant experience in a pastry kitchen or luxury high-volume restaurant.

The ideal candidate has a proven ability to design, prepare, and execute innovative dessert menus with visual appeal and culinary precision.

They bring strong time management and multitasking skills, lead with adaptability, and operate as a collaborative team player with a sharp eye for detail and consistency.
