As Director of Food & Beverage, I will fully comprehend the vision of Six Senses to help people reconnect with themselves, others and the world around them and our values of local sensitivity and global sensibility, crafted experiences, emotional hospitality, responsible and caring, fun and quirky and pioneering wellness.
Sustainability, Wellness and Out of the Ordinary experiences are at the core of everything we do at Six Senses. I will safeguard these pillars and its strategic planning and development and ensure all directives, practices and initiatives are implemented, embraced, adopted within the hotel/resort.
Duties and Responsibilities
As Director of Food & Beverage, I will assume full responsibility for the efficient operation of the Food & Beverage department to provide exceptional product and service within brand operating standards.
The duties and responsibilities will include:
• Continually focus on the rejuvenation of the culinary experience.
• Establish purchasing practices that meet the requirements of the Six Senses nutrition and sustainability platforms.
• Instill a cost-focused philosophy through training and education.
• Establish and deliver financial returns related to revenue generation, profitability and ROIC.
• Develop, implement, and maintain local food and beverage marketing programs for the hotel.
• Monitor local competitors and industry trends.
• Operate the property consistent with all legal, statutory and financial requirements and documentation, reporting systems, contractual obligations, security and safety protocols, communications, product and service standards, host management practices and budgetary controls.
• Eat With Six Senses Champion: In partnership with the Executive Chef, act as the primary ambassador for the "Eat With Six Senses" philosophy.
• Sustainability Steward: Partner with the Executive Chef to champion and implement all F&B sustainability initiatives, from menu design to eliminating single-use plastics and managing on-site organic gardens.
• Experience Architect: Conceptualize, design, and execute unique and memorable guest experiences beyond the menu.
• Curator of Local & Ethical Stories: Build deep, meaningful relationships with local farmers, fishers, artisans, and purveyors, weaving their stories into menus and experiences.
• Inspirational Team Leadership: Recruit, develop, and retain passionate F&B professionals while cultivating a positive, creative, and high-energy work environment.
• Strategic Financial Management: In close collaboration with the Executive Chef, hold full accountability for the department's financial performance, including budgeting, forecasting, labor management, and P&L analysis.
• The Ultimate Host: Be a constant, visible, and engaging presence with guests, building genuine relationships and personalizing their experiences.
• Holistic Wellness Integration: Collaborate with the Director of Wellness & Spa and other departments to ensure F&B is fully integrated into the overall guest wellness journey.
• A Passion for Wellness & Sustainability: Deep, personal commitment to sustainable practices and a holistic approach to wellness.
• Proven Innovator in Sustainable Luxury: Demonstrated history of creating and implementing successful sustainability and wellness initiatives in luxury or boutique F&B.
• The Natural "Host" Mindset: Genuine passion for caring for people with an empathetic and engaging leadership style.
• Expert in Local & Seasonal Sourcing: Extensive experience in developing menus and supply chains based on locally sourced, seasonal, and organic produce.
• Creative Visionary with Financial Acumen: Proven ability to manage complex F&B budgets and drive profitability while upholding brand values in wellness and sustainability.
Qualifications
To execute the position of Director of Food & Beverage, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:
• Possess a Bachelor’s degree in Hotel Management, culinary arts, or related field plus 4 or more years related experience, including management experience, or an equivalent combination of education and experience. Diploma in Catering or Business and more than five years’ experience in a similar role, preferred.
• Fluent in English are preferred.
• Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.
