Job Description

The Commis Sommelier supports the Head Sommelier and restaurant team in delivering an exceptional wine and beverage experience to guests. The role involves assisting in wine service, cellar management, and developing product knowledge, while ensuring high standards of service are maintained in line with the resort’s luxury standards.

Key Responsibilities

Wine Service & Guest Experience

Assist in presenting, recommending, and serving wines and beverages to guests.

Support the Head Sommelier in guiding guests through the wine list and pairing wines with dishes.

Ensure correct wine service procedures are followed, including decanting and glassware selection.

Maintain a professional, approachable, and guest-focused attitude at all times.

Cellar & Stock Management

Assist in receiving, storing, and organizing wine and beverage deliveries.

Monitor stock levels and update records accurately.

Ensure proper wine storage, rotation, and cellar cleanliness.

Support monthly stocktakes and inventory checks.

Teamwork & Knowledge Development

Work closely with the Head Sommelier and restaurant team to deliver a seamless service.

Take part in tastings and training sessions to develop wine knowledge and service skills.

Assist in updating wine lists and beverage menus when required.

Promote upselling opportunities to maximize revenue while ensuring guest satisfaction.

Standards & Compliance

Follow company standards, health & safety, and hygiene regulations.

Handle all glassware, bottles, and equipment with care.

Ensure a clean and organized mise-en-place in wine service areas.

Qualifications

Previous experience in Food & Beverage service, preferably in a luxury hotel or fine dining environment.

Basic knowledge of wines and beverages (WSET or similar certification is an advantage).

Passion for wine and willingness to learn and develop as a sommelier.

Strong communication and interpersonal skills.

Ability to work in a fast-paced environment while maintaining attention to detail.

Team player with a proactive attitude.
