Responsibilities Primarily responsible for preparing, portioning, and storing meat and fish. Receives and orders meat and fish and maintains stock levels of items. Position reports to Executive Chef. Butchers Meat: Prepares and portions meat and seafood for dish preparation; maintains par levels and communicates with all supervisors to ensure smooth production of food for guests. 60% • Food Safety: Stores and handles food properly. Following Health Department and ServSafe requirements. Reports and documents any observed or known safety hazards, conditions, or unsafe practices and procedures to management immediately. 20% • Maintains Proper Meat Inventory: Orders all meat and seafood for preparation of dishes; Check PDN reports and e-mails from supervisors and management daily to make sure meat and seafood is supplied for special requests from Guests and special functions or events. 10% • Banquet Event Orders: Check BEO's daily to stay on top of items needed for upcoming special functions. 10% Schedule (Days & Hours worked): Flexible Days 7:00 am – 4:00 pm WHAT YOU'LL RECEIVE AS A CANYON RANCH COLLEAGUE Use of services and facilities including the spa, fitness classes, lectures, and overnight stays at all Canyon Ranch locations nationwide.
