**Job Overview**
Responsible for the service of all catering food and beverage. In so doing, it expected to direct all catering service efforts toward guest satisfaction, the achievement / maintenance of division standards, and profit maximization.
**Candidate Profile**
1. Competencies (skills & knowledge required for the job): Prior Banquet manager experience, independent, willing to change, holding accountable
2. Language: Fluent English, Cantonese and appropriate Mandarin
3. Education: Diploma\Degree – Hotel Management - negotiable
4. Professional Certification/License: N/A
**Duties and Responsibilities**
_Primary_
1. Maintain organization of banquet service areas.
2. Reviews menu / service (BEO) with Event Management and Banquet Chef on a daily basis.
3. Communicate any additional set-up requirements with Event Management.
4. Coordinate all food requirements with the kitchen, including accurate counts for preparation and plating.
5. Coordinate all liquor requirements with the Beverage Manager.
6. Assigns work / functions to Headwaiters and Captains.
7. Maintain up-to-date details on banquet functions and communication changes to associates.
8. Responsible for hiring and initial training of all catering service employees.
9. Responsible for any on-going training of captains / waiters which is necessary to maintain our standards of service and profit margins.
10. Responsible for labour costs of all service employees, therefore, supervises the scheduling of service employees and review schedules in terms of coverage and adherence to budget guidelines.
11. Responsible for maintaining budgeted banquet beverage cost, controllable cost. Profit and loss statement and presentation in good manner
12. Directly supervise the work of banquet captains and personally observe the performance of service personnel.
13. Directly responsible for the grooming standards and appearance of all catering service employees.
14. Ensures that all schedules catering function take place on-tine and according to plan.
15. Make personal contact with guests and assist them with any requests or suggestions.
16. Supervise proper tabulation of all banquet checks and is responsible for ensuring that all checks are presented to guest for signature.
17. Prepare (or reviews) a critique made of every catering function. All problem areas should be noted and either corrected or a proposed solution should be forwarded to the Director of Catering.
18. Attend daily BEO function meeting and assign accountability to Headwaiters.
19. Conduct “Pre-Function Briefings”
20. Keep copies of all BEO’s, along with beverage requisitions.
21. Responsible for control and maintenance of all service equipment. Write work orders as necessary.
22. Conduct quarterly China, Glass, Silver and Linen inventory.
23. Bring to the attention of the Director of Event Management all materials and equipment that require re-ordering or need to be replaced.
24. Recommend new products and / or methods of operation to the Director of Event Management.
_Secondary_
1. Responsible for the maintenance of discipline and a high level of morale among catering service employees.
2. Ensure that all guest and employee complaints or requests are handled quickly and fairly.
3. Responsible for reporting all guest and employee accidents immediately to Security, so that accident reports may be prepared / further assistance may be obtained (if necessary).
4. Responsible for maintaining a high level of sanitation and cleanliness in service areas.
5. Responsible for maintaining on-going energy conservation and loss prevention programs among service employees.
6. Responsible for training Head Waiters and Captains in all aspects of the Manager position, so that they may take a total responsibility in the Manager’s absence.
